Thanksgiving Leftover Sandwiches: All the Holiday Joy You Can Hold in Two Hands

Don’t just reheat that extra plate for a repeat of last night’s dinner. Transform those coveted leftovers into a lunch you’ll look forward to all morning!

Because from the last scoop of candied yams to a spoonful of mashed potatoes, our anything-goes Gluten-free Holiday Leftovers Sandwich recipe makes every deliciously festive scrap sing!

How? Stack hearty slices of gluten-free seitan holiday roast with a generous handful of gluten-free stuffing and smear a big, bright dollop of cranberry sauce on toasted Whole Grain Wide Slice bread.

Then sit down and savour the joy of your favourite food holidays with a seriously satisfying gluten-free leftovers sandwich!

Instructions:
For the Sautéed Kale:
  1. Heat olive oil in a pan over medium-high heat. Add the garlic and let cook until soft but not browning.
  2. Bring up the heat to high, add the veggie stock or water, and toss to combine. Cover and cook for 5 minutes.
  3. Remove cover and continue to cook, stirring until all the liquid has evaporated.
  4. Season with salt and pepper to taste.
For the Gluten-free Holiday Leftovers Sandwich:
  1. Toast 2 slices Little Northern Bakehouse gluten-free bread.
  2. Spread a layer of vegan mayo on one slice of bread and top with 1 or 2 slices of Vegan Gluten-free Seitan Holiday Roast, a couple scoops of gluten-free stuffing, fresh or sautéed kale and any other ingredients you’ve got that feel like they belong in your sandwich.
  3. Spread cranberry sauce on the second slice of bread, close it up, and enjoy all the gluten-free holiday goodness you can hold in two hands!
