Instructions: For the Cinnamon Apple Pie Toast Topper
- Dice apples into same-sized ½-inch to 1-inch cubes (or see tip)
- Put apple pieces into a pan with ¼ cup of water. Cover the pan with a lid, leaving it askew to allow steam to escape. Cook over medium heat for about 5 minutes, stirring occasionally, until the apples become slightly soft.
- Add cinnamon, maple syrup, and brown sugar on top of the apples and stir until everything is combined. Place the lid back on the pot leaving a small slit of space instead of fitting it tightly.
- Reduce heat to medium-low and cook for about 3 or 4 more minutes, stirring every minute until the apples reach your desired softness (cook time may vary depending on the apple variety you chose and the size of your dice—a crisp apple like Granny Smith or Pink Lady will take longer to soften than the softer Ambrosia apples we used).
- Remove from heat and serve. Allow unused portions to cool on the counter and store in an air tight container in the fridge for up to 5 days.
For the Gluten-free Sourdough Cinnamon Apple Pie Toast
- Toast Gluten-free Multigrain Sourdough Wide Slice bread to preferred crispness.
- Spread about ¼ cup a thick and creamy dairy-free yogurt, cream cheese, or cottage cheese on toast and top generously with scoops of Cinnamon Apple Pie Toast Topper (cool or still warm).
- Sprinkle with a pinch of cinnamon and drizzle with maple syrup or agave as desired.
Tips:
- Mix it up! Just like apple pie, an assortment of apple varieties can give you a more grown-up bite. Any firm apple that softens while holding its shape when cooked is fair game for this easy toast topper, too—try Honeycrisp, Braeburn, Granny Smith, Pink Lady, Golden Delicious, Fuji, or Jonagold. Play with sweet and tart or pair softer and firmer apples or use what you’ve got and see what happens!
- Shake up your spices! Cinnamon is just a starting point. Apple pie spice is nice (2 tsp storebought or DIY with 2 tsp ground cinnamon, ½ tsp nutmeg, and ¼ tsp allspice). And so are ground ginger, cardamom, or cloves. Or take a cue from caramel and add a pinch of salt with any of the above to round out the sweetness. Experiment to perfect your personal apple pie spice combo!
- Slice instead of dice! Core and slice apples into 1/3-inch slices and cook as above until just starting to soften if you’re feeling fancy.
- Bake it until you make it! Try this hands-off how to: toss all ingredients together in an oven safe dish and at bake at 350°F until apples are soft (25 – 30 minutes).
